The grapes quality means less to do in the cellar and during ageing. Entirely traditional methods, with the fewest possible tasks during vinification, make it possible to obtain fair and fine wines, without any excess of any kind. We have learned over time to lighten our influence as winemakers, bestowing a little freedom upon the wines, which will then be the true reflection of their grape variety and their terroir.

Aging is carried out in such a way as to guide the wines, to point them in the right direction. For the reds, it is a beautiful row of recent, but very neutral, oak casks from various sources, which will take care of subtly fleshing out the wines until bottling (between 20 and 22 months of ageing). While preserving their personality, their style, their energy and their “vitality” as the Anglo-Saxons say. Some barrels are Burgundian, others Austrian, or northern Italian. This diversity is very useful and allows us to be more precise, taking into account the personality of each plot into the final blend.
The renewal of barrels, in recent years, has also meant that we can go a little further in elevage neutrality, through exploring alternative types of containers. In sandstone jars (Rosé Nuances) and “Kiosque” containers sandstone too, with concrete reinforcement), for Rouge Epidaure. These "neutral" containers mean that we can get a little closer to the original expression of our terroir and reveal all the subtleties of our wines.
